Jam Chop

Prepare the ingredients to be used. It is best to use a thicker blueberry jam. If the jam is too thin, boil it in a small pot and add a little water starch to thicken it.

All the ingredients of the middle species are mixed into a dough without kneading, and fermented in a warm place, and fermented to 2 times the size.

The fermented middle seeds are torn into small pieces, put into the mixing tank, and then put all the ingredients except the butter in the main dough.

Use a chef's machine to stir at low speed to form a dough, then beat at medium speed for 2 minutes, add the softened butter and continue to beat.

Beat until the dough can pull out a thinner film.

The surface of the dough is smooth, put it in a fresh-keeping box, cover the lid and put it in a warm place to ferment.

The fermented dough is vented and divided into 8 equal parts, rounded, covered with plastic wrap and proofed for 20 minutes.

Take a proofed dough, flatten it and roll it out into a rectangle with a little jam in the middle.

Roll up the dough, knead it tightly, knead it a little longer on the chopping board, and make all the dough in turn. The dough is placed in the baking tray. The baking tray I use is 28*28 square.

In autumn and winter, the temperature is low, you can put the baking pan in the oven (without turning on the fire), and put a bowl of hot water under the baking pan, which can help the dough to carry out the second fermentation. The second fermentation takes about 1 hour. Spread a layer of whole egg liquid evenly on the surface of the fermented dough and sprinkle a little crispy grains. If there is no crispy grains, you can leave it alone.

Preheat the oven in the upper and lower tube heating mode, the temperature is 180 degrees, put the baking tray into the middle of the preheated oven, and bake for about 20 minutes.
