Japanese Fried Chicken Nuggets

Take only the meat part of the chicken, remove the chicken skin and fat, and cut into 3cm cubes.

Grind the ginger and garlic into a puree with a grater, add mirin, soy sauce, white sugar, salt and crushed black pepper and mix well, then add the chicken pieces and marinate for 30 minutes.

Knock an egg into the marinated chicken, then add cornstarch and flour to mix well.

Pour half a pot of oil into a small deep pot, heat up to 50% hot on medium and low heat, add a few pieces of chicken, and fry until the surface is golden and remove the oil. Fry all the chicken pieces one by one to control the oil.

Heat the oil pan again, increase the oil temperature to 60% hot, add all the chicken nuggets and fry until golden and crispy, remove and control dry. Put chicken nuggets on the plate, wash the cabbage leaves and cut into filaments, and serve with them.
Tips:
1. It can be dipped with mayonnaise, tomato sauce, salt and pepper, cumin and other sauces according to your own taste. It can also be paired with lemon, tomato and other fruits, which not only adds flavor but can also be used for plate decoration.
2. Mirin is a kind of seasoning in Japanese cuisine. It uses rice as the main raw material, plus rice koji, sugar, salt, etc., which is a kind of cooking wine. If there is no mirin on hand, you can use rice wine with some brown sugar instead.
