Japanese Red Bean Buns

Get all the materials used

All the ingredients except butter were put into the bread machine and kneaded to the expansion stage (about 25 minutes), then added butter and continued to knead to the complete stage (kneading for another 20 minutes after adding the butter).

Cover the kneaded dough with plastic wrap and ferment to 2 times its size. The temperature in my kitchen is low, and I put it back in the bread bucket to ferment.

After the fermented noodles are taken out and exhausted, they are divided into 7 portions, rounded and covered with plastic wrap to relax for 20 minutes

When the dough is relaxing, I made the bean paste filling. I made the filling in advance, each 50 grams, prepared 7 servings, and rounded.

Put in a bean paste ball, lift it to the side and pinch it tightly. Then lift and pinch the surrounding corners, round them, and place them with the mouth down.

Put it into an environment with a humidity of about 70% at 35 degrees for the second fermentation. I put it in a non-electric oven and put a plate of hot water to keep the temperature and humidity for fermentation.

After fermenting to 1.5 times the size, spray a little water on the surface, dip a section of the rolling pin in a little water, and then dip black sesame seeds on the top of the bread, so that the black sesame seeds can evenly stick to the bread

Cover the dough with oil paper

Cover the baking tray and squeeze the dough evenly. Then put it in the lower part of the preheated 180 degree oven and bake for about 18 minutes.
Tips:
It is not recommended to use commercially available red bean paste. I personally think that the commercially available red bean paste is too sweet and greasy, and it is not pure red bean paste. Other ingredients are added. It is best to make red bean paste by yourself. Don’t be lazy, only good ingredients will do it. Make a good taste~ Baking is not something that can save time and laziness, a little bit of trouble, the taste will be discounted a lot~
