Japanese Style Black Cod

Peeling fish skin with a knife blade

Make a marinade and cook on low heat to increase the whiteness of sake

Plus a small amount of mirin

Add soy sauce

Use tools to grind out ginger juice

Spread the marinade on the cod and marinate for 6-8 hours

Preheat the oven at 160° for 15 minutes (Vantage oven OE619C-11CRSA is used)

After taking it out of the oven, use a musket to spray the surface of the cod with a little color, and finally put it on the plate. Don’t throw away the skin of step 1. Just crush the skin and sprinkle it on the fish.
Tips:
Method of grating fish skin: heat the bottom of the pan with another clean pan, put the fish skin on another slightly wider pan, combine the two pans with each other... so that the fish skin is fried straight and it is ready to be used when it is cold. Torn to pieces
