Jinsha corn kernels, also called baked corn with egg yolk, are said to belong to Cantonese cuisine or Sichuan cuisine. But I don't know exactly which dish it is. Usually, this dish is available in restaurants, and this kind of dish is not usually cooked at home. Because I received a box of corn kernels, I thought I could try to make Jinsha corn. The bagged sweet corn kernels are more effective than the corn kernels peeled from ordinary corn. The salted egg yolk is perfectly wrapped on the corn kernels. It is bright yellow and tastes more sweet and tender.

6. Stir-fry slowly over medium heat, until the salted egg yolk is loose and sanded, and combined with the corn kernels to make it salty and fragrant. Mix the salted egg yolk with corn kernels and stir fry until all the egg yolks are frothy, turn off the heat and bring out of the pan.
When sauteing corn kernels with salted egg yolk, be sure not to add water, otherwise the salted egg yolk will be mushy and you will not have a smooth texture. The salted egg yolk has a salty taste, I didn’t add any more salt
