Jinsha Tofu

Prepare a piece of tofu, 2 salted duck eggs, 4 shallots, 1 garlic, 3 spicy millet, and 1 coriander.

Cut tofu into pieces of about 2 cm. When buying tofu for frying, buy harder tofu. If you don’t know how to choose tofu, you can tell the store that the tofu you bought is to be taken home and fried. This way the store I will pick harder tofu and sell it to you.

Peel off the shell of the salted duck egg, separate the yolk and egg white, and chop the egg yolk and egg white separately.

The white and green onion leaves should be cut separately, the garlic is peeled and flattened with a knife, then chopped into minced garlic, and the millet is spicy and cut into small circles for later use.

Heat oil in a pan, add tofu cubes and fry, and fry all sides of the tofu cubes until golden brown.

After the tofu cubes are fried, put the tofu cubes aside, add the chopped egg yolks and stir fry, and stir-fry the egg yolks until they become foamy.

Fry the egg yolks into bubbles and then add the chopped egg whites and stir-fry evenly.

Because the salt content of each salted duck egg is not consistent, you can taste it first, and then decide whether to add salt according to the saltiness. If it is weak, you can add a little salt and stir fry. Add the spicy millet and green onion leaves before starting the pan and stir-fry evenly to get out of the pan.
Tips:
The salted egg yolk itself has a salty taste, so you must taste it before adding salt to decide the amount of salt.
