Jujube Bun

10g of water and 3g of baking powder are combined, and 500g of flour and 250g of water are kneaded to form a smooth dough. The water absorption of each brand of flour is different. Just knead it into a smooth dough that can be adapted to the touch. The dough is fermented in a warm place to double its size.

The fermented dough is taken out, fully kneaded and aerated inside, kneaded into long strips, and then divided into small doses.

Tips:
1. The temperature of the water when making the noodles is about 35 degrees Celsius. The amount of water is only for reference. It will vary due to the difference of the flour used. 2. Do not steam the jujube bun immediately after it is done, but wake up for a while, so that the steamed jujube bun will be beautiful;
3. After the dough is divided into small doses, it must be covered with a slightly moist gauze to prevent it from drying out;
4. After the steamed bun is cooked, turn off the heat, wait a few minutes before opening the lid and take it out, so as not to open the lid and cause it to collapse when the fire is turned off.
