Jujube Walnut Candy

You can prepare walnut kernels, either roasted or roasted. I cracked the walnuts by myself, so I didn't roast them.

Red dates are boiled in water to soften, then add appropriate amount of red date water to puree with a blender, and sieve to puree. This step is very tiring.

Put the sugar in a pot, add 60g of water, and cook on a low heat. No need to stir, turn off the heat when the big bubbles turn into small bubbles, about 20 minutes.

Wait for the boiled syrup to cool slightly, add 100g water and pour in cornflour.

Add whipped cream, heat and mix on low heat.

Wait for the syrup to thicken, add the jujube puree and mix well, continue to heat and stir until a solid shape can be drawn, stirring in one direction.

Add walnuts, mix well, put in a plate to cool, cut into pieces and wrap with glutinous rice paper for storage.
Tips:
Be sure to cool the syrup before adding cornflour, otherwise it will form small pieces and affect the taste.
Stirring must be done in one direction.
If you like to eat harder sugar, add more sugar and less maltose, and if it is softer, add more maltose and less sugar. You can do it yourself.
