Kelp and Peanut Pot Trotters

Wash peanuts and soak up;

Cut ginger into large pieces;

Chop the chives and set aside;

Wash the pig's feet and blanch them in a pot of boiling water for 2, 3 minutes;

Put clean water and pig's trotter into the casserole, the amount of water is about twice that of the trotter

Slowly boil over medium and low heat until boiling, add appropriate amount of cooking wine;

Boil again until boiling;

Turn to low heat, cover and simmer for 10 minutes, turn off the heat and simmer for 30 minutes; turn on the low heat and cook for 10 minutes, turn off the heat and simmer for 30 minutes... Repeat this 3 to 4 times, and the trotters are basically cooked (with chopsticks Pierce through);

Use a skimming spoon to remove the grease on the surface;

Add kelp and peanuts;

Add jujube and cook slowly over medium and small heat;

Boil until the soup is white and the trotters are crispy, add appropriate amount of salt to taste;

Add appropriate amount of pepper;

Finally, add green onion to garnish, turn off the heat and start the pot.
Tips:
1. The peanuts are soaked first, and then they will be crispy and waxy when they are boiled, and the color of the soup will be better;
2. I use small deep-sea kelp, no need to soak, wash or cook in advance, if you use dried kelp, you need to treat the dried kelp in advance;
3. If you don't use a pressure cooker, it is difficult to cook the trotters in a short period of time. It is a good way to stew them while cooking. You can also stew the trotters until they are crispy and rotten;
4. The grease must be removed, otherwise everyone knows the consequences.
The method of removing grease depends on personal habits. In fact, using a spoon to skim out the fat is the most stupid way. I have a coup: the cooked trotters and the soup are cooled to room temperature and placed in the refrigerator for more than 4 hours. The fat will condense on the surface, which is easy to do. Scratched out. It's just a matter of trouble, and I have to stop being greedy.
