Kidney Bean Hoof Soup

The ribbed pig's front hoof, washed, cut along the bone and cut into pieces

Boil cold water into the pot to remove impurities and blood foam. The blanched trotters are rinsed with hot water.

The big white kidney beans were soaked in water a day in advance, and the two contrasts clearly showed that the soaked beans were much larger.

Prepare the boiled meat ingredients. This time I don’t use much, mainly to preserve the original flavor of the soup. Adding coriander root will give the soup an extra fragrance.

Put the blanched pig's trotters into boiling water, add the cooking ingredients, boil on high heat and simmer on low heat for 40 minutes

Add the soaked beans, add pepper, continue to simmer for 30 minutes, add salt and cook for 10 minutes.
Tips:
The salt should be added last, and if it is too early, the protein will coagulate prematurely and affect the umami taste of the soup.
