Kuaishou Omelet Rice

Add appropriate amount of oil to the pot. When it is 60% hot, add the shrimp cubes and fry until the color changes. Add various vegetable grains and seasonings and stir-fry evenly.

Add the rice and stir-fry until the rice grains are distinct and the soup is almost dry, then turn off the heat.

Beat the eggs with starch.

Heat up a flat-bottomed non-stick pan and pour a large spoonful of eggs. Turn the pan to form a uniform circle.

Turn it over and turn off the heat, and cover half of it with fried rice.

Tips:
1. I use ready-made mixed vegetable cubes, you can cut them at home to make them fresher.
2. The egg is added with starch to prevent it from breaking easily.
3. The egg cake must not be spread too thick or it won't cover.
4. When the pot is hot, pour the egg liquid so that it is easy to set the shape.
