Kuaishou Piglet Bread

Prepare all kinds of ingredients. The arowana high-gluten flour I use has high gluten and fine flour. The direct fermentation method (one-time fermentation) baking does not affect the bulkiness of the finished product, which can be described as a multiplier.

Pour cold water and yeast powder into the bucket of the bread machine or cook machine. If you don't have a machine, you can also mix the dough manually.

Pour high-gluten flour on the water, cover the yeast powder on the surface, and add salt, sugar, eggs, and corn oil. Separate the salt, sugar and yeast powder with flour to avoid pre-fermentation during mixing.

Start the bread machine or cook machine, run a dough mixing program, and knead it into a smooth dough.

Cover the kneaded dough and let it stand for about 10 minutes. 6. With the aid of a kitchen scale, divide the dough into 50 grams each.

Take a small piece of dough, knead it and roll it out into a round cake, and cut it with a knife as shown in the figure. 8. Make the ears of the piglet first: Fold the two sharp corners downwards, as shown in the picture.

Next, make the pig's mouth: turn the bottom piece of dough upwards as shown in the picture, and pinch the two sides at the bottom. 10. Do this to all the piglets.

Put the finished piglets on a baking tray lined with greased paper, leaving a suitable space between each, and put them in the middle of the oven to ferment for about 10-15 minutes.

Do this for all the little pigs.

Put the finished piglets on a baking tray lined with greased paper, leaving a suitable space between each, and put them in the middle of the oven to ferment for about 10-15 minutes.

After the fermentation is complete, adjust the upper and lower heat of the oven to 155 degrees, and bake directly for about 12-15 minutes. The specific time and temperature should be adjusted according to the actual oven temperature of different ovens.

After taking it out to cool, draw the eyes and nostrils with a little melted dark chocolate.
Tips:
1. For shaped bread, the fermentation time should be controlled to avoid excessive fermentation and deformation during baking. 2. You can also use fire dragon juice instead of cold water to make the noodles. The piglet noodles made are more lovely. 3. Ordinary flour needs to be sieved before use to avoid impurities and agglomeration. The arowana high-gluten flour I used is no longer necessary.
