Lamb is Refreshing, Fried Lamb with Green Onions

Lamb ribs remove small bone residues and clean them;

Cut the vertical texture of the meat into slices, add 30g green onion, 15g light soy sauce, 2g sugar, thirteen spices, ground cumin and sesame oil. After mixing, add water starch and marinate for 20 minutes;

Cut 220g green onions into hob pieces for later use;

Put oil in the pot to heat, add the marinated lamb slices;

Stir fry until the meat slices change color and remove;

Heat oil in the bottom of the pot and add the chopped green onions;

When the green onions become soft, add 1g of salt and 2g of sugar and continue to fry a few times;

Add the fried mutton slices, stir fry quickly and evenly out of the pan and put on a plate.
Tips:
When marinating lamb, adding white wine and a little green onion will help to remove the fishy smell and increase the fragrance. Cumin is also recommended to be chopped and marinated, which also removes the fishy smell and enhances the fragrance;
When marinating mutton, do not put too much water starch, otherwise the over-tender taste will lose the strength of mutton;
When marinating mutton, the bottom taste should not be too heavy. When the last step is to stir fry with the green onions, in order to blend the taste of the dish, a little salt should be added;
In the first step, do not stir-fry the lamb, take it out when the color is ripe, and the last step is just to mix it with the green onions into a dish;
