Lao Gan Ma Pork Floss Bread

Put all the ingredients of the bread dough, except the butter, into the bread machine and knead into a smooth dough

Cut the butter into small pieces and add it to the dough, and continue to knead to the expansion stage where the film can be pulled out.

Start the fermentation program in the bread machine for basic fermentation, about 1 hour, when you dip your fingers in the flour and go into the hole, it is fine. (If it collapses, it means the bread has been sent)

Roll out the fermented dough with a rolling pin

Divide the dough into several small portions, knead it into a round shape, and wait for 15 minutes in the middle of proofing. (According to the size of the mold, the size of each part can be adjusted appropriately)

Roll out each small portion into a strip, add a small amount of Lao Gan Ma sauce and spread it evenly, leaving 1 cm around it without rubbing;

Sprinkle the pork floss and roll it from side to side, tightly.

Place them one by one into the round baking pan. (I used an 8-inch live bottom cake pan)

Now proceed to the second fermentation. The oven is 40 degrees Celsius, and the upper and lower tubes have fermentation function. Put the baking tray in the oven to ferment for 40 minutes. In order to increase the humidity, you can put a bowl of hot water. It is about twice the size of the original dough.

Take out the baking tray and brush a layer of egg mixture on the dough. After the oven is preheated, heat the upper and lower layers to 180 degrees, put the baking tray in the oven and bake for about 15 minutes, until the surface of the bread is golden and fragrant, and it can be out of the oven.

The bread is soft and has a fine texture.
Tips:
1. If you don’t like spicy food, you can also change the fillings to sweet ones, such as red bean paste, jujube puree, coconut and so on.
2. Because I want to make a round shape, I used a cake mold. In fact, a non-stick bakeware is the best.
3. Step 4 The step of rolling out the air is very important and cannot be omitted. Otherwise, the finished product organization is not delicate.
4. During the baking process, observe the color of the bread at any time. If the color has reached golden yellow and the time is not up, you can cover the surface of the bread with a piece of tin foil and continue baking. Otherwise, the color of the bread will be darker at the back.
5. If the bread cannot be eaten in time, it should be packed in a fresh-keeping bag and eaten as soon as possible. Because the bread will harden and taste worse at low temperatures, it is not recommended to store it in the refrigerator.
