Tips:
The ribs I used had a bit thicker bones. I replaced them with standard small ribs or small-cavity ribs. The taste and appearance were even worse.
Of course, you can also have a more flexible approach, boil some bone broth in advance, and braise the noodles directly in the bone broth.
