Large Row of Noodles
1.
When the water is boiled, boil it underneath, remove the cold water, drain and set aside.
2.
Wash the large row and pat both sides loose with the back of a knife.
3.
Marinate with ginger and cooking wine for 20 minutes.
4.
Coat the marinated large row of cold noodles evenly with starch, and put them in a pan.
5.
Fry on medium heat until golden on both sides and remove.
6.
Use the remaining oil in the pot to saute the shredded ginger and aniseed just used for marinating, then add rock sugar to boil.
7.
Put in the fried large row, add soy sauce, a little salt and water to cover the large row.
8.
Throw in the green onions and cook together, turn to low heat and simmer for 20 minutes, until the chopsticks can be easily inserted.
9.
After the large ribs are simmered, stir the marinade into the noodles.
10.
Wash the wok, add a little oil, and fry the washed choy sum.
11.
Put the mixed noodles, large row and choy sum on a plate, and the old-fashioned large row of noodles is complete.
