Lazy Western Roast Leg of Lamb

Preheat the oven to 200 degrees, wash lamb leg, mince garlic, and chop rosemary.

Spread salt, black pepper, and oil evenly on the leg of lamb, then slowly rub it, and massage the leg of lamb.

After kneading, apply minced garlic and 40 grams of chopped rosemary to the leg of lamb.

We like the taste of spices better, so we added mixed spices. If you don’t like the spice flavor very much, or if you don’t have a mix of spices, you can skip this step.

After massaging the leg of lamb, put it directly into the oven at 200 degrees, and bake it for about 1 hour and 40 minutes. Depending on the size of the leg of lamb, the time will be different. The leg of lamb I bought is 2.4 kg.

After the lamb enters the oven, prepare potatoes, sweet potatoes, and carrots. All are peeled and cut into pieces. I prefer peeling. If you like to roast with the skin, you can just wash it.

Don't cut too small, about two knuckles in length.

Make a pot of water, add about 1 to 2 tablespoons of salt after the water is boiled, and then add the potatoes first, because the potatoes will take longer to boil. Then add sweet potatoes and carrots in sequence. I cook the potatoes and sweet potatoes together, and the carrots last. As a result, the sweet potatoes were boiled.

Boil potatoes, sweet potatoes, and carrots until soft, then turn off the heat and drain the water directly. Take a baking tray and pour some oil.

Add the drained potatoes, sweet potatoes, carrots, and evenly sprinkle with salt, black pepper, and 10 grams of chopped rosemary. You can also add some garlic here. My garlic uses lamb shanks, so I didn’t add it here.

Like lamb shanks, put in the oven.

When the time is up, the leg of lamb is almost ready. Use a thermometer to test that the temperature in the meat is above 70 degrees, so that the inside is about 7 minutes cooked. Then set aside to let the meat relax for 10 minutes. But I took 10 minutes this night, because I didn't hear the ringtone, so I was a little bit overwhelmed. My potatoes have not been roasted yet. They have been roasted for half an hour. After the leg of lamb is taken out, move the potatoes to the upper layer and continue roasting for 10-15 minutes.

To make the sauce, the lazy way, directly pour the juice from the roasted lamb shank into the pot, stir-fry on a low heat, add flour, and boil until the soup is thick. You can also add red wine, if the taste is weak, you can add some salt and black pepper.
Tips:
There is no skill, just wipe the seasoning and bake it in the oven.
