Leek Chicken
1.
Drumsticks in a pot under cold water, add a little cooking wine to get rid of fishy.
2.
Blanch until the water has just boiled off and the chicken skin is obviously tight, then remove it.
3.
Add some hot water to the pot, add chicken legs, green onion, sliced ginger, turmeric powder, salt, and cooking wine to add flavor to the chicken legs.
4.
After the high heat is boiled, turn to medium and low heat and cook for 7-8 minutes, then take it out and let cool. (The time is generally controlled within 10 minutes)
5.
Take a small bowl, add fresh soy sauce, oyster sauce, a little vinegar, sugar, salt, sesame oil and mix into a bowl of juice.
6.
Finely chop the leek into pieces.
7.
The cooled chicken legs are boned and cut into pieces, and placed on a plate.
8.
Pour a bowl of juice around.
9.
Sprinkle the leeks on the chicken. (If you like spicy food, add more chili)
10.
Heat the wok, add a little oil to heat, and pour it on the leeks.
