Lemon Madeleine

Wash the lemon with salt, and chop a small amount of lemon zest.

Melt the butter and let cool.

Beat the eggs, add sugar and mix well.

Add lemon zest and mix well.

Sift in the mixture of low flour and baking powder.

Use a spatula to cut and mix into a fine, non-grained batter.

Add butter in portions, cut and mix well, then put in the refrigerator for half an hour.
8.
Put a little butter on the mold to make it easy to peel.
9.
After refrigerating the batter, take it out and put it aside for a while, cut and mix a few times and put it into a piping bag.
10.
Squeeze the mold into the middle layer of the oven and bake at 190° for about 15 minutes.
Tips:
The temperature of the oven is adjusted according to the temperament of your own oven. The color of my grill is a bit heavy.
