Lemon Thyme Cookies

142 g butter softened at room temperature

Add 84 grams of lemon gum (if not, use 80 grams of caster sugar + 4 grams of lemon zest instead) and beat until the butter is white

28 grams of fresh thyme, chopped (or use 7 grams of dried thyme instead), mix it with butter and stir well (this biscuit will have a strong spice flavor, if you don’t like thyme, you can reduce its dosage)

Add the egg yolks to the butter one by one and mix well

Sift in a mixture of flour, almond powder and cheese powder and mix well

Wrap it in a fresh-keeping bag to form a square cylinder, and put it in the refrigerator overnight

Take out the next day and cut into slices about 5 mm thick

Arrange into the baking tray, and send it into the preheated 180℃ oven

Bake for 15-20 minutes (please adjust the time and temperature according to your own oven)
