The local cuisine refers to the local dishes of Shanghai. The braised local dishes look like thick oil and red sauce, but the taste is very sweet. I used to like to watch the crispy duck made when my dad helped others to make a wedding wine. It was steamed and then fried in a large oil pan to make the duck crispy and crispy, which made people swallow. After I learned how to cook it, I felt that the process of steaming the duck meat first was time-consuming. Now that a microwave oven can save a lot of time.

Local Crispy Duck Legs

1. Wash duck legs and drain water

2. Prepare ginger slices

3. Add oyster sauce, salt, light soy sauce, dark soy sauce, ginger slices, white sugar, drop an appropriate amount of high white wine, mix well and marinate for more than 12 hours

4. Then put the sauce together in a special microwave oven

5. Cover for 2 minutes and 3 times for 2 minutes after 7 minutes

6. This duck is almost cooked

7. Use soy sauce to smear the epidermis and color

8. Heat the pan and pour the oil

9. Put the duck legs in warm oil, turn over and fry repeatedly over medium and low heat

10. Fry until the skin is crispy, scoop and drain the oil

11. Cut into pieces and serve

Tips:

1. By doing this, I saved a lot of time, and pour the sauce into the microwave to avoid moisture loss of the duck meat, and the taste is more tender and delicious;
2. Be patient during the frying process. Use medium and low heat to slowly fry crispy.
