Longan, Yam and Red Date Soup

Prepare all the ingredients.

Peel off the shell of the longan for later use.
3.
Wash and peel the yam, cut into pieces for later use.
4.
Add 1000 ml of water to the pot and bring it to a boil on the fire.
5.
Add yam and boil.
6.
Add red dates and continue cooking.
7.
When the yam is ripe and the red dates are soft, add longan and continue cooking.
8.
When the sweet taste of longan has penetrated into the soup, turn off the heat and add some rock sugar to taste.
Tips:
1. Open the lid and cook on medium heat to prevent the yam from overflowing the pot.
2. If the longan and red dates are very sweet and the soup is already sweet, add less or no rock sugar.
