Longjing Shrimp is a traditional famous dish that reflects the delicate temperament of West Lake. I have tasted it countless times. I have never tried it myself. I tried to make it myself when I saw the plump Thai shrimps. The taste is excellent, the taste is delicious, and the fragrance is refreshing.

Longjing Shrimp

1. Prepare tea

2. Soak in boiling water for half a minute to drain the tea.

3. Put it back into the bowl and soak in boiling water for later use

4. After washing the shrimps, drain the water and remove the shrimp threads

5. Cover with plastic wrap with salt, cooking wine, cornstarch and egg white syrup and put it in the refrigerator for 2 hours to let it expand

6. Pour oil into the hot pot, and heat the oil for 5 minutes

7. Pour the shrimps and scatter them quickly, and they will rise up after changing the color

8. Pour tea in another pot

9. Pour the cooking wine and boil over high heat

10. Add salt

11. Pour the shrimp to keep on high heat

12. Add the right amount of chicken essence to make it fresh and turn off the heat

Tips:

1. Add a proper amount of corn starch to the marinated shrimps, and the crystal clear effect will not be achieved if there is more.
