During the local Qixi Festival, we have to eat a deep-fried product called noodle fish, which is to put very soft fermented dough into a fish-shaped mold and fry it in a frying pan. Some families do not have molds, so they directly evolve into pancakes. Roll the fermented dough into pancakes, cut them into rectangles, and fry them in a frying pan. The fried noodle fish is very chewy and delicious because of the addition of a little salt, but it is not as soft as fried dough sticks. This year, my mother-in-law also fried a lot. I chose a few harder ones and made this dish. "

Loofah Fried Noodle Fish

1. Prepare harder noodle fish.

2. Cut the noodle fish into small cubes, cut the pepper into pieces, slice the garlic, and cut the green onion into sections.

3. The loofah is peeled and cut into hob pieces and soaked in light salt water.

4. Put a small amount of oil in the pot and saute the shallots, garlic, and hot peppers.

5. Add the loofah and stir fry.

6. Stir-fry the fish in the noodles.

7. Add appropriate amount of water, salt, and black fungus to a boil. When the soup is almost exhausted, it will come out of the pot.

Tips:

Because the noodle fish is fried, it is necessary to put less oil in order to maintain the light taste of the dish.
