Lotus Leaf Cake with Meat

Add a teaspoon of about 5 grams of white sugar to 300 grams of flour, dissolve 3 grams of yeast with 150 milliliters of warm water, then add it to the flour little by little, and stir little by little with chopsticks to form a noodle-like shape

Add 5 grams of edible oil and knead the dough into a smooth dough with your hands. Be sure to knead for a while to make the dough smoother. Cover the kneaded dough with plastic wrap and proof it to double its size;

About 1.5-2 hours in summer and 3-4 hours in winter, the dough will appear beautiful honeycomb after waking up;

Take out the fermented dough and knead it for a while to get rid of the bubbles inside. The organization in the noodles will also be very delicate;

Roll the dough to lengthen it and cut it into equal sizes;

Take a piece of dough, flatten it, and roll it into an oval shape. Use a brush to apply a thin layer of cooking oil on the dough;

Then fold the oiled oval dough in half, and fold the oily side inward;

Use a fork to press the pattern on the pie crust, and then shape the corners. (You can also use a clean comb to emboss the lines, or use a toothpick to emboss the lines) The lines should be pressed deeper, otherwise the lines will disappear or not be obvious after waking up;

Then reshape the corners and pull out a lotus leaf stalk shape from the lower end by hand;

I also made the shape of a shell. After folding the pie crust in half, pierce the small holes vertically with a fork, and then use the index finger and thumb to pinch the widest bottom part and close it to the middle to become a beautiful shell shape.

Put the prepared lotus leaf cake in a steamer for a second time proofing for 15 minutes, then let cool water on the fire, wait for the air to steam for 10 minutes, turn off the fire, and simmer for another 5 minutes to get out of the pan.

Tips:
❥ After being folded in half, the dough must be brushed with oil, otherwise it will stick together;
❥ Be sure to knead the cooked noodles for a while to get rid of the air.
❥ The patterned noodles should be harder, too soft and easily deformed.
