Lotus Root Trotter Soup

The trotters, lotus root, and ginger are ready; the trotters are chopped for me by the merchant, or you can buy them home and chop them yourself, but you must use a machete and pay attention to safety.

Peel the lotus root and cut into pieces.

Use a hair clip to remove the hair on the trotters, scrape them with a kitchen knife, and set aside.

Pour clean water into a boiling pot, add pepper, patted old ginger, and washed trotters. Bring to a boil over high heat, remove any foam, turn to medium heat and simmer for about 50 minutes.

Add lotus root.

Cover the lid and continue to simmer for about 70 minutes.

After the ingredients are simmered, add an appropriate amount of salt and stir evenly.
8.
Turn off the heat and serve.
