Mung bean soup is a traditional Chinese folk medicine for relieving heat. Mung beans have been soaked for a long time to shorten the boiling time. The soaked mung beans will be boiled for about 25 minutes to become floury and rusty. Therefore, in Guangdong, we call mung bean sweet soup as mung bean paste. In order to make the mung bean paste more nutritious, boil mung beans and lotus seeds together into a sweet soup of lotus seeds and mung beans, which can nourish the mind, soothe the mind, strengthen the brain, and relieve fatigue.
