Wash the pork belly with white vinegar and flour, then cut into large slices, add green onion and ginger cooking wine to blanch it.

Tips:
The pork belly washed with flour and white vinegar looks very clean, and after blanching it, there is basically no taste. But when cutting into strips for soup, foam will still appear, just beat it carefully.
The lotus seeds can be soaked in advance or boiled directly. The difference is that the lotus seeds that have been soaked in advance can be removed before the pot, while the lotus seeds directly in the pot are not easy to take out, and the taste is slightly bitter.
Pork belly is better with pepper, black pepper and white pepper are both good.
