Lotus Seed Yam and Tremella Soup

Prepare the raw materials, wash the red dates and yam

The lotus seeds are soaked in water a day in advance

Soak the white fungus with cold water 2 hours in advance

Wash and tear into small pieces

Put water in the pot, add lotus seeds, red dates and white fungus

Bring to a boil and simmer for 40 minutes

Peel the yam, cut into sections, and put it in the pot

Add appropriate amount of rock sugar, boil on high heat and continue to simmer for 20 minutes.
Tips:
If you want to stew the white fungus for soft glutinousness, it is not just a long time stewing, but a slow simmering on a low heat. The low heat is just a little bit open. If you use a high fire for a longer time, the stewed white fungus is not soft enough. The soup is not as sticky as it is.
