Sago is one of my favorite desserts, but cooking sago gives me a headache. After learning some tricks, cooking sago is much easier. The trick is to soak or boil sago with hot water, it will melt with cold water; when the center is a little white, it must be supercooled (soaked in cold water) to cool it down. After re-boiling, turn off the heat, cover and simmer for 25 minutes, the white spots will disappear and the whole sago will become transparent."
