Mapo Tofu

Prepare ingredients: tofu, pork essence, Pixian bean paste, pepper, minced ginger and garlic, chopped green onion.

The tofu is sliced and then cut into 2 cm square pieces.

Pork meat with a small amount of fat is chopped into minced meat.

Raise the pot and burn the oil.

Stir fragrant peppercorns.

Remove the browned peppercorns and discard them.

Pour in minced ginger and garlic until fragrant.

Add 1 tablespoon of Pixian bean paste and stir-fry to get the red oil.

Pour in the minced meat and stir fry.

Add water to the pot and pour the raw soy extract (because the bean paste contains a lot of salt, there is no need to add salt).

Add soy sauce to color.

Boil the minced meat and sauce to a boil.

Pour in the tofu cubes and simmer for 2 minutes to taste.

Add water starch to thicken.

Turn off the heat and pour into the soup bowl.
