Matcha Wolfberry Cake

Sift low-gluten flour and matcha powder;

Separate the egg white and egg yolk, put the egg yolk in the batter and mix well

Add a part of wolfberry and mix well;

Add 4 drops of lemon juice to the egg white, add 40 grams of fine sugar at one time after the fish eyes are soaked, and then beat until it is wet and foam, that is, lift the egg beater to a small hook;

First put one-third of the meringue into the egg yolk paste, and mix well by cutting and mixing;

Pour the egg yolk paste back into the bowl of egg white paste, and mix well with the same cutting and mixing method;

Line the baking tray with an oil pan, and sprinkle the remaining goji berries evenly.

Pour the batter into the baking pan, pick up the baking pan and shake it a few times to produce large bubbles; put it in a preheated 175 degree oven and bake for 15-17 minutes;
