Mcdonald's Golden Arch French Fries Simulation Biscuits
1.
The unsalted butter softens at room temperature to the extent that it can be easily stirred with a spatula. If the time is tight or the room temperature is too low, you can cut the butter into small pieces, heat it in the microwave for ten seconds, flip it, and heat it for another ten seconds to help soften it. But remember not to melt into a yellow liquid, otherwise it cannot be used directly. It must be put back in the refrigerator to freeze or refrigerate to a solid state. Here, the whipping of the butter plays a key role in the crispness of the finished biscuit, because the biscuit formula does not add fluffing agents and other additives.
2.
Whisk into feathers with a whisk
3.
Add in caster sugar or equal amount of powdered sugar and beat well
4.
Add the whole egg liquid in small amounts one by one, whipping each time until it is completely absorbed, and then add the next time
5.
Stir everything until there is no separation of water and oil, sift into low-gluten flour and mix well
6.
Take 1/3 of the dough, add red yeast rice powder or food coloring gradually, until it is evenly mixed to the desired red color
7.
The other 2/3 of the original color dough is rolled between two pieces of oil paper into a large piece with a flat surface. The thickness is similar to that of French fries. Put it in the refrigerator to freeze the dough hard.
8.
Take a piece of tin foil, fold it in half, and fold it into the shape shown in the figure
9.
Roll the red dough between two layers of oil paper into a 3mm thick piece, and then cut out a slightly larger shape according to the tin foil. If the dough is too soft to handle, you can put it in the refrigerator for a while.
10.
Also make two pieces, cover them on tin foil, and pinch the seams on both sides. Use a metal mold to support the inside of the tin foil. I used a three-inch mousse mold, a flat iron plate with a handle on it, and the following picture will be photographed
11.
Take a look at the side. The top of the pocket needs to be cut into a half arc with a sharp knife. When I made it, the dough was a bit soft, and it was too late to put it in the refrigerator. I did this directly, so the edge of the baked pocket was not very flat.
12.
Take another small piece of raw dough and knead it into a thin strip, forming a McDonald’s M shape
13.
Put the finished logo on the surface of the red pocket and press it a little
14.
Put the red pocket in the preheated oven, middle layer, and bake at 150 degrees for about 10 minutes. The specific time and temperature should be increased or decreased according to the actual oven temperature of different ovens and the thickness of the roll. Pay attention to the baking effect, don't overpower the fire, it will turn yellow and black after coloring, and it will not look good.
15.
After baking, let it cool slightly, and take out the metal mold that is supported inside.
16.
Then take out the tin foil completely, and the fries packaging bag is ready
17.
Cut the hardened dough in the refrigerator into French fries-like strips with a knife. The length is the same. When you put it in your pocket after baking, it is more appropriate to break the length. It's best if the cut surface is square, it doesn't matter if there is a slight deviation, it's about the same. Because it will be slightly deformed when roasted.
18.
Put it in the middle of the oven, heat up and down at 150 degrees, and bake for about 12-15 minutes. The surface needs to be slightly colored.
19.
Let it cool for a while, break the French fries-like biscuits with different lengths, and insert them into the bag. Or squeeze a little ketchup to make it more like it.
