Melon Strips Mixed with Egg Yolk

Prepare the required materials.

Boil salted eggs in cold water.

Wash the cucumber, peel and flesh, and cut into 6 cm long and 0.6 cm wide square strips.

Add a pinch of salt.

Grasp evenly to remove excess moisture from the melon strips to make them more crispy and tender.

The salted egg is steamed to get the yellow, crushed and sieved.

Add appropriate amount of salt, chicken essence, and sesame oil to the cucumber strips.

Add vegetable oil to the pot and heat until 30% hot, add salted egg yolk.

Add a little water to boil and simmer for 1 minute to make the mixture in the pot into a semi-fluid sauce. Let the pot cool, place the cucumber strips on a plate, and pour the mayonnaise on the melon strips. (It can also be mixed directly with melon strips)
