Milk Cover Pearl Milk Tea-completely Homemade
1.
Make the black tea in advance. The Earl Grey black tea I use can also be used in tea bags. Soak it for a longer time, and then add the condensed milk. Then adjust the sweetness. I don’t think there is any need to add milk because there will be a milk cover. If you don’t add a milk cover, you can make a thicker black tea with condensed milk and milk.
2.
Add water to the pot, 1:1 brown sugar, brown sugar, white granulated sugar can also be added, but the color of brown sugar is more similar.
3.
Do not use too much water, add brown sugar and boil
4.
Pour it into a basin containing tapioca starch while it is hot, and watch the tapioca starch adjust the water. Use a spoon or chopsticks to stir it first to avoid getting hot. Then when it reaches the temperature that the hand can touch, it becomes a ball. Knead it into a ball, not broken or sticky. Just knead into a ball, don't knead hard
5.
Pinch the small balls, just like the size of the bubble tea sold outside. Remember to put some dry powder on the kneaded balls to avoid sticking together. If you find it troublesome at home, you can rub the strips into small squares and it’s delicious.
6.
Pinched
7.
Prepare a pot to boil the water and add the pearls. After boiling, turn to low heat and simmer for 10-15 minutes, stirring occasionally in the middle. After cooking, put it in cold drinking water for later use. Stir it occasionally to avoid clumping.
8.
The whipped cream and sugar are beaten with a mixer at low speed. When there are small lines, add a little salt and beat for a while. You don’t need to send it to the hard, the beaten can still flow, and it feels a bit thick.
9.
Drain the pearls and put them in a cup, and put a milk lid made of light cream on top
10.
It’s best to eat the milk cover as soon as possible.
