Put the corn flour, ordinary flour, salt, and instant dry yeast into the pot together. Be careful not to contact the salt and the yeast directly. If you want to add sugar, add it in this step too;

Slowly add the milk, stirring while adding, until the ingredients are completely mixed and become a thicker, slightly fluid batter. Cover with plastic wrap and place in a warm place for basic fermentation;

About 30 minutes or so, the volume of the batter expands, and there will be many air bubbles on the surface, and the basic fermentation is over;

Stir the paste with chopsticks, it will produce many large bubbles. Smell at this time, the batter is slightly sour. If the taste is very sour, then it may be too hairy, you can add a pinch of edible alkali and mix well in the dough;

Spread a thin layer of oil in a non-stick pan and heat it over a medium-to-low heat. Then take a spoonful of batter, pour it into the pot, and make it into a round shape. I use the soup spoon that I usually drink at home, a flat spoon will do;

Heat on medium and small heat for about 30 seconds to 1 minute. There will be many bubbles on the surface of the dough, and the bubbles will burst. Use a spatula to gently push the noodles along the edge, you can easily move the noodles, turn it over at this time;

After turning it over, continue to heat for 20 to 30 seconds on medium and low heat, and fry until the color you like, and you can get it out of the pan. After being out of the pot, it can be placed on the hollow drying net to cool down. You can add honey, syrup, jam, or savoury sauce as you like.
Tips:
1. If the room temperature is very low, you can first dissolve the yeast powder in warm milk to activate the yeast. If the room temperature is too high, ice milk can be used;
2. Coarse grain flour particles are generally larger, so the dough will not be very sticky. This tortilla will not form a dough at the end, but a thick paste;
3. When the dough is fermented, be careful not to overheat;
4. You can also add dried fruits or nuts to the batter as you like.
