Minced Eggplant

1. Prepare the ingredients needed for cooking

2. Add a spoonful of starch and some salt to the minced meat and marinate for a while

3. Chop ginger, cut green onion into pieces

4. Eggplant cut into 1 cm diced

5. Add appropriate amount of cooking oil to the wok, add oily minced meat, ginger, green onion and stir fry

6. Add minced meat and stir fry

7. Add the diced eggplant and stir fry

8. Add a tablespoon of tomato juice

9. Add in the right amount of salt and fry until it is out of the pot

Tips:

1. The minced meat in oil must be fried in the pot first,

2. Oil minced meat will also produce oil, so don't put too much cooking oil
