Mini Purple Sweet Potato Marble Bread
1.
Put the main dough materials except butter into the bread bucket one by one, then put the bucket in the bread machine and fix it, and start the kneading program;
2.
After a kneading process is over, add butter that has softened at room temperature and start the "dough" process, which includes two stages of kneading + fermentation, and the default duration is 1:40;
3.
After kneading the dough, the program automatically enters the fermentation stage;
4.
Put the purple sweet potato filling into the bag, roll it into thin slices with a rolling pin, and set aside;
5.
Take out the fermented dough, knead it evenly, and roll it out into a rectangle twice the size of the filling;
6.
Put the purple sweet potato filling in the middle of the dough;
7.
Then fold both sides of the dough upward to wrap the filling, and pinch the joints tightly;
8.
Use a rolling pin to roll the dough into a large rectangular piece;
9.
Fold inward along 1/3 of the long side from both ends of the dough piece to form a new rectangular dough;
10.
Roll it out again with a rolling pin;
11.
Then do another three-fold discount;
12.
Roll out a large rectangular piece;
13.
Use a sharp knife to cut the dough sheet into 9 dough pieces along the long side;
14.
Slightly flatten the cut noodles along the cutting direction, braid every 3 noodles in a group;
15.
Braid the braid and squeeze it tightly;
16.
Cut the braid into two sections from the middle;
17.
Place it in a mini bread mold;
18.
Put the mold in the middle of the oven, put a bowl of hot water at the bottom of the oven, turn on the "low-temperature fermentation" mode for the final fermentation, the default time is 40 minutes, the specifics can be increased or decreased according to the actual fermentation of the dough;
19.
Fermentation is complete;
20.
Put the mold into the third layer of the preheated oven, and bake it at 170 degrees for about 25 minutes in the "up/down tube baking" mode. Pay attention to cover with tin foil after coloring;
21.
Demould immediately after being out of the oven, and keep it sealed after cooling;
Tips:
1. The filling operation here is the same as the butter "opening" method. The whole process is the repeated operation of folding/rolling out after filling the filling;
2. Maybe it's because the color of the purple sweet potato filling is not dark enough, and there is not enough filling, so the cut surface texture of the final product does not look obvious enough. If it is red bean paste filling, it may be more obvious. .
3. The mold size is about 12*9*6;
