White kidney beans (A) are soaked in water one night in advance;

After the pig's trotters are chopped into small pieces, soak them in clean water for about 2 hours. You can change the water several times in the middle to remove a part of the blood, and then wash and drain the water;

Prepare the seasonings (the ginger, green onions in A, the pepper and tangerine peel in B);

Make a pot of clean water, add cold water to trotters (A), half of tangerine peel (B), pepper (B) and ginger peel (A);

Add white wine (B);

After the fire is boiled, continue to heat for about 15 minutes, during which the froth is continuously removed;

Until the final soup color is clear;

After the pig's feet are taken out, wash them with warm water. Use a knife to carefully scrape the surface of the pig's feet, including the wrinkles. If there is unplugged pig hair, also clean it up. After finishing, drain the water;

In a larger casserole, put the scallion (A) and the loosely sliced ginger (A), the remaining tangerine peel (B) and Chinese pepper (B);

Put in the trotters;

Add enough water, about 3~5cm below the trotters;

After the high heat is boiled, continue to add for 30 minutes. During this period, use chopsticks to stir the trotters in the pot from time to time to prevent sticking to the bottom. If there is foam on the surface, continue to remove it;

Add rice vinegar (B), turn to low heat, close the lid, and cook for 1 hour on low heat;

The white kidney beans should be soaked until the volume of the beans doubles, and the skin of the beans is completely expanded and there are no wrinkles;

Wash the soaked white kidney beans, drain the water, add to the casserole, boil and turn to low heat;

Continue to cook for 2~3 hours, until the pig's feet are soft and rotten, the soup is thick and white, and the soup is thick;

Prepare chives (C), coriander (C), garlic (C) and tahini (C);

Put the tahini sauce in a small bowl, add 5ml of hot water, and stir until thick;

Chop the chives, chopped green onion, mince the coriander, peel the garlic and press it into minced garlic, add all to a small bowl;

Add steamed fish soy sauce (C);

Put the pepper (C) and food (C) in a container that can be heated by an open flame, heat it on a low heat, and fry until the pepper is fragrant;

When eating, put some salt in a bowl, put it in the trotters soup, and dip it into the ingredients.
Tips:
1. The white kidney beans must be soaked one night in advance, soak them until they are fully expanded;
2. Soak the trotters in advance to remove part of the blood and reduce the dirty smell;
3. When the pig's feet are scalded, be sure to skim off the surface foam, you can prepare a basin of water, soak the filter spoon in the water every time you skim it, so that it can be skimmed cleanly;
4. Adding tangerine peel and pepper is the key to removing the dirty smell of pig's feet. But don’t add too much tangerine peel, it will be bitter;
5. After the trotters are boiled on high fire, be sure to continue to cook for 15 to 30 minutes. This is the key to the color of the thick white soup;
6. When stewing pig's feet, add a little rice vinegar, which can remove fishy and help calcium from pig bones to separate out;
7. The pig's trotters must be stewed until they are crispy and deboned, so that the collagen will be completely precipitated and the soup will be thick;
8. The dipping material can be adjusted according to your liking. If you like spicy food, you can put some red oil in it, which will be more delicious.
