Monkey Mushroom Chicken Soup

Old chicken is ready;

Fresh yam

Soak the Hericium erinaceus in advance, slice the ginger for later use;

Chop large pieces of chicken;

The yam is peeled and cut into pieces and soaked in water to prevent oxidation;

Put the chicken in the soup pot;

Add ginger slices, boil over high heat, and skim any foam;

Put the Hericium erinaceus in the high heat and turn to the minimum heat for 90 minutes;

Add the yam, continue to boil for half an hour, add a proper amount of salt before drinking;

Tips:
1. If you think the chicken has a fishy smell, you can fly it in water or soak it in the pepper water to remove the smell;
2. It is better to boil the old chicken for more than 90 minutes, and for the tender chicken, it will be almost within 90 minutes;
3. The yam is best put in later, otherwise it will become muddy and not shaped; 4. Hericium and chicken are very fresh, no need to put other condiments.
