More Than Every Year

Wash the baby cabbage and cut off the leaves. Leave about 1/3 of the vegetable side. Use a knife or scissors to cut into a lotus shape. Put it in a pot of boiling water and add a little salt and a few drops of oil to blanch the water until soft. It is shaped like a lotus flower.

After the cod is chopped into fish puree, add pepper, salt, chicken essence, a little water and starch, then mix well with chopsticks in one direction until the fish puree is tenacious.

Spread a thin layer of oil in the mold, then put the fish paste into the mold, flatten the surface, put peas to decorate, make it into a lotus shape, and steam on medium heat for about 10 minutes.

First change the tenderloin into a rectangular shape, and then cut it into a fishtail shape with a vertical knife at a little more than 1/3. You can use scissors to fix the tip of the tail, and then cut the remaining part into a cross knife

After cutting, soak in clean water for a few minutes to soak the mucus out of the meat and remove it to drain the water.

Add light soy sauce and a little salt, knead it with your hands, and marinate for 10 minutes

Dip dry starch evenly on the surface of the marinated tenderloin, and shake off the excess starch.

Put the tenderloin into a colander for a little shaping. Put the tenderloin into the colander and deep-fry the golden brown in a frying pan at about 160 degrees. Then heat up the oil and re-fry it again to make the tenderloin crispy, about ten seconds, remove it and put it on Vinda kitchen paper towels to absorb the grease for later use.

After the wok is heated, add a proper amount of oil, pour in tomato sauce, sugar, vinegar, and a proper amount of water and cook until thick. Then add appropriate amount of water starch to thicken, pour in the oil to make sweet and sour tomato juice.

Place the tenderloin in a suitable place on the plate and pour it with sweet and sour tomato sauce.

Use black beans to make goldfish eyes, red pepper slices to make water bubbles, cucumber slices to make ripples, fish cakes to make lotus, baby vegetables to make lotus, you can eat it
Tips:
When frying the tenderloin, it’s best to put it in a colander to keep the shape of the fish intact
