Mushroom Bitter Gourd Black Chicken Soup
1.
Cut the local chicken into small pieces, add a little water to the pot and heat until warm, add the chicken, leave the pot to boil for about 7 minutes, (mainly to prevent the soup from becoming turbid), rinse and set aside.
2.
Soak the mushrooms in water in advance, wash them, and set aside.
3.
Shred the ham, smash the ginger, peel the garlic and set aside.
4.
Add appropriate amount of water to the casserole, add chicken nuggets, shredded ham, add a little rice wine, ginger, garlic, green onion knots, and mushrooms.
5.
Bring the casserole to the top of the fire, bring the high heat to a low heat and simmer slowly; simmer for about an hour, until the chicken is easy to eat.
6.
Slice the bitter gourd, blanch thoroughly in boiling water, and put it in cold water to remove the bitter taste.
7.
When the chicken is simmered, add bitter gourd and wolfberry and simmer for five minutes.
