Mushroom Chicken Pizza

Put all the "pizza dough" ingredients together and knead it into a smooth dough. Knead vigorously until the dough is very gluten, stretch the dough, the dough can form a thinner film (expansion stage), that's it. Put the dough at 28 degrees and cover it with plastic wrap to ferment for about 1 hour to make the dough 2.5 times its original size.

While making the dough, let's make the pizza filling. (Chop garlic into minced, shiitake mushrooms into small pieces, onion into small cubes, and chicken thighs into small pieces, these steps can be done in advance) Heat 15 grams of olive oil in a pot, add minced garlic and fry to get a fragrance.

Stir in the tomato sauce, stock (water), turn to a low heat and slowly simmer into a thick pizza sauce, set aside.

Pour the shiitake mushrooms, onions, and green peppers into the pan and stir-fry until the water evaporates and serve.

Pour the diced chicken into the pan and fry until cooked (you don't need to add oil in the pan, it is recommended to use a nonstick pan).

Mix the fried chicken with the pizza sauce cooked in step 5. Counting the fried vegetables in step 6, there are two ingredients.

After finishing this series of things, the dough should be ready. Divide the fermented dough into two portions (I made an 8-inch one, so there is no need to divide it. If you make two 6-inch ones, you will need it), cover it with plastic wrap and leave it to ferment for 15 minutes. (Intermediate fermentation is to relax the internal structure of the dough again to prevent the dough from shrinking when rolling or baking)

After the intermediate fermentation is complete, take the dough out and roll it into a round cake the size of a pizza pan. The edge part can be rolled out a little thicker, and a fork is used to make a small hole in the dough (so as to prevent the bottom of the dough from swelling due to airtightness during the baking process).

Sprinkle a layer of mozzarella cheese on the rolled crust (according to your own taste, sprinkle more and less, the milk will be more flavorful, but the fat will be greater. I like to sprinkle a lot, but the picture is less sprinkled of).

Spread one of the ingredients just made-chicken pizza sauce evenly on top.

Sprinkle another layer of cheese evenly.

After finishing this series of tasks, put the pizza pan in the middle of the preheated oven, and bake it for 10 minutes at 210 degrees. Tips:
(1) The tomato sauce used in this pizza is a tomato sauce, which is the kind in KFC McDonald’s. It has salt and sugar in it in advance, so there is no need to add salt and sugar.
(2) Before roasting, the moisture in the vegetables must be sautéed, otherwise the pizza will be wet.
