Mushroom Hen Soup

Soak the mushrooms in cold water.

Half an old hen, cut into large pieces, and blanched in boiling water.

Put the water in the casserole and pour the water for soaking the mushrooms (the mushrooms are dried by themselves and are very clean).

Put oil in the pot, put green onions, garlic, star anise, and peppercorns until fragrant.
5.
Fry the blanched chicken nuggets out of oil.
6.
Put the fried chicken nuggets in the casserole.

Add shiitake mushrooms, after boiling, skim the foam and change the heat to low.

Simmer for about 1 and a half hours, add carrot slices, and simmer for a while until the meat is rotten and the soup is thick.
9.
Add chopped green onions, coriander and salt to taste.
10.
A bowl of fragrant chicken soup is ready. . .
Tips:
I brought home-raised hens from my mother’s house. It takes more time to stew and it tastes good.
