Mushroom Pancakes

Wash the eryngii mushrooms and slice them vertically. (Pleurotus eryngii is relatively large, so it is first divided into two and then cut into pieces vertically)

Spread the flour on the plate, and coat the eryngii mushrooms with a thin layer of flour.

Knock the eggs into a bowl, add salt and beat them up.

Pour vegetable oil in a pan, heat it on a low heat, coat the flour-coated pleurotus eryngii with a layer of egg mixture and fry it until golden on both sides, then serve.
