Mushu Meat

Prepare raw materials;

Add appropriate amount of salt, starch, light soy sauce and cooking wine to the tenderloin slices and marinate evenly;

Beat the eggs into a bowl, add an appropriate amount of salt and 1 teaspoon of cooking wine, mix well and set aside;

Heat the pan with cold oil, pour the egg liquid;

After the egg liquid is slowly fried until the shape is set, use chopsticks to cut into small pieces, fry them and serve them for later use;

Pour a little oil into the pan and add the marinated meat slices to stir fry;

After the pork slices are smoothly fried and change color, add the soaked black fungus and day lily to stir fry;

Stir fry a few times and then add a little light soy sauce to continue stir fry;

Add appropriate amount of salt and pepper to taste and stir-fry evenly;

Finally, pour the scrambled eggs into the inside and continue to stir-fry for a few times before serving them on the plate, sprinkle with some chopped green onions.

Tips:
1. Add appropriate amount of salt, starch, cooking wine and light soy sauce to the meat slices and marinate in advance; 2. Add a little cooking wine to the eggs to help remove the fishy and fluffy; 3. Soak the black fungus and day lily in advance and set aside.
