Nanning Special "old Friends Fried Noodles"

Flat rice noodles (we call chopped noodles) 400 grams;

Minced meat, sour bamboo shoots, minced garlic, tempeh, chili sauce, ready;

Heat the pot to dry, heat it up, add the sour bamboo shoots to dry the moisture, mainly the sour water of the roasted and pickled sour bamboo shoots, so that it will not smell sour;

Heat the pot, add oil, and stir-fry the rice noodles over high heat. Add a little soy sauce to mix, add an appropriate amount of salt, and twist the pot with both hands to disperse the rice noodles to make the color and taste even;

Hot pot with oil, lard, enough oil, otherwise the fry will not produce a fragrance, sauté the minced garlic tempeh and chili sauce;

Add the sour bamboo shoots and stir fry, then add the marinated pork slices to stir fry. This process needs to be hot, and hands and feet must be fast. These materials will scorch when they are slow;

Pour in the fried rice noodles and fry them together. Don't use a spatula to stir them, but keep turning the pot to make the rice noodles and the meat mix well.
