When I see this dish, it is usually in the winter. I am used to making homemade jelly before, and I will have a new year after I eat it.

Nianwei Pork Jelly

1. Thaw the skin and rinse well.

2. Put a pot under cold water, boil it on high heat for ten minutes after the water is boiled.

3. Shave off the fat in the skin and remove the hair, cut into large pieces and rinse.

4. Prepare a piece of clean gauze and wrap garlic, ginger, star anise, grass fruit, bay leaves, cinnamon, Xiaoxiang, and Chinese pepper.

5. Put the pork skin into the pot, put the seasoning bag, add three to four times the amount of water than the pork skin, add cooking wine, light soy sauce, and dark soy sauce.

6. Bring the fire to a boil, remove the foam, and boil it for an hour and a half on a low fire.

7. Put the soup in a basin to cool and solidify.
