In addition to the broth, green vegetables are also essential for noodles, usually with seasonal vegetables. Nowadays, wild vegetables are highly regarded, so wild vegetables are often used in noodles. Noodle dishes are also a kind of wild vegetable to match with braised noodles at special times. As the name suggests, this dish is especially good with noodles. It has a smooth taste and light taste. It will not steal the taste of soup. The braised noodles are delicious and nutritious. Now I’m about to fall into the trap. I eat noodles in Erfu. Even though it’s summer, meat is needed to supplement nutrition. So you have to eat meat when you eat noodles. Noodles with Vegetables and Pork Bone Braised Noodles

1. Pork bones and boiled meat: 3 star anises, 30 peppercorns, 2 pieces of cinnamon, 2 small pieces of ginger, 2 dried chilies, boiled into pig stock

2. 400 grams of flour, 3 grams of salt and 200 grams of water, knead into a smooth dough for 30 minutes. Put the noodles in the cook machine and neutralize for 5 minutes. There is no chef machine to knead the dough by hand until it is smooth.

3. Then divide it into doses weighing about 70 grams

4. Roll out into a long strip, press a mark in the middle with chopsticks, so that it is convenient to separate when ramen

5. Coat the surface of the rolled noodles with cooking oil, put them on a plate, and wrap them in a fresh-keeping bag for more than 1 hour.

6. Wash the noodle dishes and set aside

7. Take the required amount of pig stock, add salt and pepper to taste

8. The noodles are stretched, separated lengthwise, and put into the pot

9. Cook the noodles, about 4-5 minutes

Tips:

This amount of noodles is for 4 people in my family. You can adjust it according to your own situation. Generally, the ratio of flour to water is 2:1. It is just normal flour. If you feel that you are not able to master it, you can use high-gluten flour. For high-gluten flour, increase the amount of water a little bit.
