Northeastern Potatoes with Eggplant

Wash the eggplant, peel the potatoes and cut in half (too thick to be cooked), put them in a steamer as shown in the picture, and steam with cold water in the pot.

Shallots, garlic, parsley, finely chopped

After the potatoes and eggplants are steamed, put them in a pot and use chopsticks to tear the eggplants apart.

Put in (pre-fried egg sauce, chili oil), green onion, garlic, coriander, sesame oil, mix well and put in the refrigerator (this dish is only delicious when it is cold)
